I'm in the home stretch now!
I woke up today feeling a lot less bloated than I have in a long time. Maybe it has taken a solid week for my body to catch up to my new eating habits. I feel great today. Maybe I'm pumped because I hopped on the scale today and am down 7 lbs!
Losing weight was not my primary focus when entering into this challenge, I just felt so bloated and tired, I knew a change was needed so I had made a deal with myself to weigh in on Day One and on Day 7, but I was curious, and a 7 lb weight loss in 6 days is okay by me!
I'll check again tomorrow, and give you a final tally.

Today and tomorrow I have A LOT of leftovers to eat so I made a rice noodle bowl from some of the leftover TVP I had handy and some of that delicious sauce from the Korean "Beef" night. I added some yummy beansprouts, sweet peas and peppers and the results were really tasty!
Coming up to the final day has left me with mixed feeling. The results so far cannot be denied, I feel so much less bogged down, and tired. I don't feel as bloated and I have kick started some weight loss. Making multiple meals has been challenging, but I feel like I have found some pretty good non-meat options that even my family would be willing to eat. I will definitely include many of these options in our regular food rotation roster.
Will I maintain a vegan diet after tomorrow? Stay tuned, only time will tell!
